Sucralose is a synthetic non-nutritive sweetener, meaning that it provides no caloric value. It is made from sucrose, or table sugar, by replacing three of the hydroxyl groups with chlorine atoms. This process makes sucralose about 600 times sweeter than sucrose. Sucralose is very stable and does not break down in heat or in the presence of acids like many other artificial sweeteners.
